Christmas Coziness: Peanut Butter Banana Blondies



Peanut butter and banana is one of my most favorite flavor combinations. There's just something so comforting about it--one bite and I'm immediately a little warmer, a little happier, and a little closer to home.

These blondies can somewhat easily charade as a breakfast item, especially if it happens to be, say, Christmas morning. They're also gluten free, because you can't make baked goods that your significant other is allergic to. That's just mean. It's the holidays, for fucks sake. Bake something nice!




Gluten Free, Peanut Butter & Banana Blondies
What they're Made of:

  • 1 stick butter
  • 1 cup all-purpose gluten-free baking flour (I use Bob's Red Mill)
  • 1/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 tsp xantham gum
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 3/4 ripe, smashed banana (about 3 bananas)
  • 1/2 cup crunchy peanut butter
  • 1/2 cup mixed chocolate chips and peanut butter chips



How they're Made:
  • Preheat oven to 350°
  • Grease a 9x9" baking dish with butter, then slowly melt the remaining butter on top of the warm oven (in glass or a mug so as to not melt anything other than the butter! or in the microwave in 15-sec intervals)
  • Sift together baking flour, sugars, xantham gum, salt and baking powder
  • In a large stand mixer, beat eggs until frothy
  • Add peanut butter, banana and melted butter and continue to mix on low
  • Slowly add dry ingredients and mix until well incorporated; scraping the bowl often as you go
  • Fold in chocolate and peanut butter chips
  • Pour into baking dish and bake for 35-40 mins, or until top is golden brown and a fork/toothpick/etc comes out clean
  • Eat in your pajamas. See what Santa brought you!
