I didn't take many photos of this as I prepped it, as the bulk of it ended up in my BFF's fridge. But this was insanely easy and a great use of the Crock Pot. I did this overnight on Saturday, and by Sunday around noon, I had the most tender, delicious pulled pork I think I have ever made.
Pulled Pork with Carolina BBQ Sauce
What it's Made of:
- 1 ~4lb bone-in pork shoulder
- Salt, pepper, cumin
- ~1 T Liquid Smoke
BBQ Sauce (adapted from Big Daddy's Carolina Style Barbecue Sauce):
- 1 cup yellow mustard
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 3/4 cup apple juice (or water, if you must)
- 2 T chili powder
- 1 t black pepper
- 1 t white papper
- 1/2 t cayenne pepper
- 1/2 t soy sauce
- 3 T butter
- 1 T Liquid Smoke
How it's Made:
- Rub pork shoulder with liquid smoke, and sprinkle salt, pepper, cumin on
- Place in slow cooker fatty-side-up (if there is one particular fatty side, that is) and allow to cook on low for at least 8 hours (mine went for about 12 and was just fine)
- When your time in the slow cooker is almost up, combine all sauce ingredients except soy sauce, butter and liquid smoke and bring to a boil.
- Reduce heat to a simmer and allow to simmer for ~10 minutes or so
- While that is simmering, remove pork shoulder from slow cooker
- Carefully remove meat from the bone and any excessively fatty pieces of pork (I had a LOT of fat, but that's to be expected.)
- Lightly shred the pork and return to slow cooker
- Add soy sauce, butter and liquid smoke to sauce
- Pour sauce into slow cooker over meat and allow to come together for another ~30 or so minutes
- Make a slider, sandwich, forkful, what have you. Enjoy!
